

CHILBE
3 tbs. fenugreek Seed (very finely ground)
1 tsp. garlic (fresh - finely processed)
1/2 tsp. fresh ginger (fresh - finely processed)
6 cups cold Water
3 tbs. lemon Juice (preferably - fresh)
2 tbs. fresh coriander (fresh - finely chopped)(commonly called cilantro)
1/2 tsp. salt
cold water
A. Placing the ground fenugreek
seed in a large bowl,
add 2 cups of cold Water, mix well, beating it with a fork.
B. Let stand at least 1 hour. The ground fenugreek
seed will expand,
and settle into a jelly like consistency in the bottom of the bowl.
C. After about 1 hour, with caution, tip the
bowl to spill out the water.
D. Once again, add 2 cups of cold water, mixing
well, beating it with a fork.Again, let sit for at least 1 hour, then drain
carefully.
E. Add yet another 2 cups of cold water, mixing
well, beating it with a fork.
F. This last time, let sit for an added 1 hour,
or cover loosely and refrigerate overnight.
G. After the third soaking in water, carefully
drain, add garlic, ginger, lemon juice, coriander and salt, mix well.
I. Let sit for about 1/2 hour
J. Add more cold water to make
a jelly like consistency, about as thick as honey or a little looser.
K. Serve or place in refrigerater for later
use.
L. The longer it stays, the thicker it will get. Loosen it with cold water.
NOTE: For best results: eat within 1 - 2 days.
SONA'S CHILBE
